I’m at the point where if something is going to take more than 30 minutes to cook, I’m totally just going to munch on wasabi seaweed snacks and call it a day. Like this chipotle tuna stuffed avocado recipe. When I want something super quick to prepare, requires only basic and simple ingredients, makes me feel great and is really healthy… well, a big paleo whole30 tuna salad stuffed avocado ticks all the boxes.

And, it takes literally 5 minutes to throw together. 5 MINUTES.

There’s no excuse not to eat healthy when meals like this take 5 minutes to make. I’ve also been making an avocado salmon salad that only takes about 10 minutes from start to finish. You can find tons of quick and easy meals on Wicked Spatula and this one is always close to the top of my favorites list.

As far as stuffed avocado recipes go – they don’t come much easier or more tasty than this one!

How To Make Stuffed Avocado With Paleo Tuna Salad

There really is no effort or time involved in this super simple paleo tuna salad recipe:

  • Slice the avocado in half and remove the pit.
  • Mash together tuna, red onion, red bell pepper, cilantro, mayonnaise, chipotle chiles in adobo, and lime juice in a bowl.
  • Stuff the whole30 tuna salad into the avocado halves.

And really that’s it. Paleo tuna salad stuffed avocado that tastes incredible – in under five minutes!

TIP: Lemon or lime juice can extend the life of tuna stuffed avocado. If you are making these for dinner and they might need to sit around for a while before serving, just drizzle a little lime or lemon juice over the exposed avocado to slow down browning.

What Can I Use In Place Of Chipotle Chiles In Adobo?

I love a kick of heat in my dishes especially in these tuna stuffed avocadoes. But if chipotle isn’t your thing, or you have trouble finding chipotle chiles in adobo without sugar, then you could easily switch this out and replace with freshly chopped parsley or other herbs. Smoked paprika also gives this paleo tuna salad recipe an interesting twist of flavor without a blast of heat.

Can Paleo Stuffed Avocado Be Made In Advance?

If you make the whole stuffed avocado ahead of time, you’ll find the pitted avocado turns an unappealing brown color.

But, don’t let this stop you making the whole30 tuna salad filling in advance. When I just can’t resist taking this with me when I’m out and about, I simply make the filling and take a whole avocado or two with me.

When I’m ready for lunch, I simply cut open the avocado and remove the pit, then fill it with ready-to-go filling. Just make sure to keep the paleo tuna salad filling chilled until you are ready to eat it.

How To Serve Tuna Stuffed Avocado

This stuffed avocado recipe is just perfect all on its own. However, to mix things up a bit, you can also:

  • Dice the avocado and eat the salad inside one-ingredient plantain tortillas
  • Make a paleo tuna salad lettuce wrap (you can also make avocado chicken salad lettuce wraps for anyone in your family that isn’t a tuna fan!)
  • Make a tuna salad sandwich with paleo bread if you’re not following a whole30 plan
  • Modify baked green tomatoes with crab salad to use this whole30 tuna salad as filling instead
